The holiday season is fast approaching, and it’s my most favorite time of the year. I love the change in the weather as we live in the south and it doesn’t usually get too terribly cold. I also enjoy the chance to get together with friends and family for holiday parties and celebrations. I’m a huge believer in planning ahead of time for an event, so that the day of the party, I can actually enjoy spending time with our guests instead of slaving away in the kitchen. I’m also a HUGE fan of serving heavy appetizers and dips paired with delicious drinks and topped off with yummy {and easy to make} desserts. Having a sit down meal with babies running around isn’t always the easiest thing in the world.
Being a stay at home mom, I’ve been fortunate to find a few great groups of other stay at home mamas that have kiddos close in age to mine. We love to get together for playdates at each others house, head to the park for a morning out, and even attempt a few Mom’s Night Outs every once in a while. In between keeping our eyes on our kiddos when we’re together, we like to chat and a topic that often comes up is easy recipes. That’s why I decided to host a simple recipe swap one afternoon while the kids all played.
We decided for this swap we’d share our favorite easy desserts for the holidays, excluding cookies. And to make things even easier on us, I had everyone send me a copy of their recipe in an email so I could compile all of them to distribute electronically.
I made sure to set an area aside in our kitchen exclusively for the moms to put out there dessert selections. To do this, I cleared our coffee bar, and set out pretty fabrics and floral stems, all colors that reminded me of fall. I also set out blank recipe cards and an empty basket in case anyone wanted to hand write a recipe or two {I’m a sucker for handwritten recipes}. By the end of our get together, each mom had a full belly and loads of new recipes to try this season!
For my recipe, I shared one of my new favorites, Toffee Apple Cheesecake Bars, from the NABISCO Party Planner. It’s the perfect recipe for fall, and I’m planning on making it again for a new Thanksgiving dessert option this year. Here’s the recipe for Toffee Apple Cheesecake Bars, from NABISCO Party Planner.
Ingredients
1 Tbsp. butter
1 large Granny Smith apple, thinly sliced
1/4 cup packed brown sugar, divided
1/2 tsp. ground cinnamon
9-1/4 HONEY MAID Honey Grahams, divided
1 pkg. (8 oz.) Neufchatel cheese, softened
3 Tbsp. toffee bits
1-1/2 cup thawed frozen light whipped topping, divided
Steps
Melt butter in large nonstick skillet on medium-high heat. Add apples; stir until evenly coated with butter. Cook 8-10 minutes or until tender, stirring frequently. Add 2 Tbsp. sugar and cinnamon; cook and stir 1 to 2 minutes or until sugar is melted and mixture is well blended. Cool.
Cut 3 whole grahams into quarters using a seated knife; set aside. Line 9-inch pan with foil, extending ends of foil over sides. Place remaining grahams on bottom of prepared pan, cutting as necessary to form even layer. Stand reserved grahams around edges of pan.
Mix Neufchatel and remaining sugar in medium bowl until blended. Gently stir in toffee bits and 1 cup whipped topping; spread over grahams on bottom of pan. Top with apple mixture.
Refrigerate dessert 2 hours. Use foil handles to remove dessert from pan just before serving; top with remaining whipped topping.
Note: This delicious dessert can be refrigerated up to 24 hours before serving. Enjoy!
