When there gets to be a chill in the air, it definitely puts me in the mood for one of two types of meals….some kind of a delicious soup that’s been cooking in the crock pot all day or a nice “comfort food” kind of recipe. Usually when I make a “comfort food” I whip out my mom’s old recipe book to find something fantastic that my grandmother had passed down to her and that I remember enjoying as a kid.
Well last week, we had some cooler weather here in Georgia, and it put me in the mood for some of my Grandma’s Ham & Scalloped Potatoes.
To make Ham & Scalloped Potatoes, you’ll need:
4-5 large baking potatoes
1 can cream of mushroom soup
milk
salt & pepper
butter
diced ham
Peel and rinse your potatoes.
Make about 1/4 inch slices through each potato, until you’ve got the amount you need. I used four potatoes to serve two, but we had leftovers for lunch the next day.
Arrange your sliced potatoes in a glass baking dish.
In a small bowl mix the cream of mushroom soup and one can full of milk until blended. It will be a little lumpy (and that’s okay). Add salt and pepper to taste as well. Pour the mixture over the potatoes and add a few teaspoons of butter to the top of the dish.
Bake, uncovered at 350 degrees for about an hour and 10 minutes. After it’s cooked, remove from the oven, stir in the diced ham, and bake for another 15-20 minutes (depending on how soft your potatoes are getting). If you notice the top is browning up, cover loosely with foil before putting it back in the oven. Once the potatoes are no longer firm, your dish is ready to enjoy!
This was the perfect ending to a cold and windy day!

This is such an easy delicious way to use leftover ham. I added some seasoned salt when assembling it. I also added shredded cheddar cheese after I pulled it from the oven waiting for it to cool.
