No, not really. But you will want to take a bite or two or three of these delicious Buffalo Chicken Bites that I made for Super Bowl Sunday. I found the original recipe via Pinterest which linked me up to Christina over at Sweet Pea’s Kitchen. You definitely need to check out her blog; there are tons of yummy recipes each week!
To make Buffalo Chicken bites, here’s the starting line up:
- cooked, shredded chicken (you can do this yourself or just buy a good ole’ rotisserie style chicken from your local grocery store)
- 1/4 cup-1/2 cup Frank’s Red Hot (I used 1/2 cup because we put that sh*t on everything!)
- 3 1/2 oz softened cream cheese
- 1 cup flour
- 4 eggs (I actually only used 3)
- 1/4 cup green onions
- 1 3/4 cup sharp cheddar cheese, shredded
- 3-4 cups of crushed Cornflakes
To begin, shred your chicken. Luckily my wonderful husband did this step for me as my hands were freezing this morning!
After shredding your chicken, add to it the cream cheese, cheddar cheese, Frank’s Red Hot, and chopped green onions. Remember to make sure your cream cheese is softened enough! I popped mine in the microwave for about 30 seconds to speed up the process.
Now for the assembly line! Crush up the Cornflakes by putting them in a large plastic baggie and smashing them. This would be a fun job for little ones! Crack 3 eggs and whisk them until blended. Put your flour, eggs, and Cornflakes in three separate bowls. Have a cookie sheet ready to go (and your husband nearby in case you need more Cornflakes, you get an itch on your nose, or you need your shirt sleeve rolled up more) because it’s going to get messy! 🙂
Make 1 inch balls of the chicken mixture, roll it first in flour, second in the eggs, and third in the Cornflakes. Put each ball on a cookie sheet (you can put them pretty close together).
Once you have all of your Buffalo Chicken Bites prepared you can either put them in the refrigerator until you’re ready to bake or bake them right away. You will need to bake at 350 for 20-25 minutes. Serve them warm with either ranch or blue cheese dressing!
